Cellar Door and Bar every Friday Night from 4pm til late and Saturday 12pm til late.

Our Distillery door is located in Mount Saint Thomas, Wollongong. Come visit the cellar door to try our selection of Gins, open from 9am to 5pm Monday to Friday. Or book a table in the bar, to enjoy our signature cocktails or taste other local beer, wine and spirits. Bar is open Friday from 4pm til late and Saturday 12pm til late.

Gin Making Workshop

Become a gin distiller for the day and try your hand at creating your own custom gin. Work with one of our distillers to make a gin of your own creation using your choice of botanicals, including some you can pick from our very own botanical garden!

Minimum 4 people - 1 person per still ($250 each)
Maximum 8 people - 2 persons per still ($350 for 2)

Programme
Workshops times can vary, but are often held 10:00am to 2:00pm by appointment.

  • Introduction by expert distiller.
  • Guided tour of the distillery.
  • Learn about the history of gin, and modern Australian gins.
  • Savour and sip the South Coast range from contemporary and navy strength to Illawarra plum and the Oolong infused Old Tom, with expert guidance to identify the key flavourings (botanicals) and your preferences.
  • Next we go out into the botanical garden, learning about edible natives and their use in spirits.
  • An experienced distiller will discuss your preferred recipe, before you select your choice of botanicals and amounts - picking some from the botanical garden if desired.
  • A special lunch follows with delicious local seasonal food that is flavour matched for G+Ts.
  • Watch your recipe come to life before your eyes as the botanicals bubble and mix in the glass stills.
  • Finally, depart with 700mL of your own distilled gin, labelled with your recipe.

Due to limited stills being available for each workshop, if you need to cancel we request that you do so as early as possible. This gives us the opportunity to fill the stills for each workshop. Cancellations made fourteen (14) days or more in advance of the event date, will receive a 100% refund. Cancellations made after that time, will receive a 50% refund.

Description
A silky luxuriant coffee liqueur, cold brewed with our vodka using beans roasted within 5km of the distillery at Verona Coffee. It is then gently sweetened with natural cane sugar, allowing the delicate complexity of the coffee’s natural flavours to shine.

We use a carefully selected blend of coffee beans, sourced from three renowned origins:

Colombia - Pitalito. Full-bodied with dark chocolate, butterscotch and cherry notes.
Panama - Boquete. Creamy nut flavours with rich caramel toffee and a cinnamon undertone.
Brazil - Minas Gerais. Rich hazelnut milk chocolate with subtle hints of black currant.

Come and see how our spirits are made. One of our distillers will show you through the distillery and explain the process from start to finish, followed by a drink to finish (or upgrade to a tasting flight). Available for individuals and groups.

The South Coast Distillery story began in 2011 when two housemates, Luke and Oskar, discovered a mutual appreciation for gin. This began a weekly household tradition known as Martini Thursday, as an excuse to try a variety of gins. Their exploration ranged from just one or two martinis on the balcony, to all night parties, however the goal remained the same – to find the perfect gin to make the ultimate martini.

While Oskar went on to work in some of the top cocktail bars in the UK, he met with distillers to bend their ear on how they started, and began to think that it was possible for him and Luke. Luke on the other hand, was back in Wollongong working on gin recipes and visiting distilleries when he could. By 2017, the two mates had begun putting together a business plan and were on their way to releasing their first gin.

South Coast Distillery was established in early 2017, and operations finally began in December 2018. In April 2019, their first commercial release ‘Batch Zero Gin’ was awarded Gold at the Australian Distilled Spirits Awards, and went on to take out Champion Australian Small Batch Spirit. It was also awarded a Silver Medal at the 2019 San Francisco World Spirits Competition. Batch Zero has been re-released as Sublime Gin and is available now.  It has since gone back to back Silver medals in San Francisco, as well as a Silver at London's World Gin Awards.
