TeaEsk's award winning WuYi Mountain Oolong Tea is cold macerated in our gin before carefully balancing the tea by sweetening with cane sugar like an 18th century Old Tom Gin.

The delicate stone fruit flavour of the tea compliments the rich piney juniper and citrus profile of the gin. The added sweetness elevates both to a rich and elegant partnership.

Five Island Iced Tea

A simple and refreshing ‘instant cocktail’. The soda elevates the complex notes of the spirit while the lemon and peach accentuate the delicate flavours from the tea.

  • 30ml Five Islands Old Tom Gin
  • Soda water
  • Lemon and peach (fresh or tinned) to garnish

Add gin and garnish to a glass of ice, top with soda and stir gently before serving.

 

Charl-Tea Chaplin

Charl-tea Chaplin

A very drinkable take on the simple yet classic Charlie Chaplin cocktail. The stonefruit notes from the tea pair perfectly with the apricot brandy and the sweetness is balanced with the acidity of the lemon.

  • 30ml Five Islands Old Tom Gin
  • 30ml Apricot Brandy (Maraska)
  • 30ml Lemon Juice
  • Lemon to garnish

Combine ingredients in a shaker and shake with ice. Double strain into a coupe or tea cup, garnish with a lemon wheel.

 

Pimm’s Cup

Pimms cup

Our version of the Pimms Cup, originally crafted to aid digestion. A truly delicate but fabulous cocktail. Light, refreshing and full of fruit. The drink screams summer.

  • 60ml Five Islands Old Tom Gin
  • 15ml lemon juice, freshly squeezed
  • 120ml ginger ale
  • 1 cucumber slice, 1 mint sprig, 1⁄2
  • strawberry sliced, 1 lemon wheel,
  • 1 orange wheel

Add all ingredients over ice in a highball glass, stir briefly to combine.

 

Perfect Serve

The crisp lighter notes of the Mediterranean Tonic brings the underlying gin to the front while embracing the sweetness of the spirit. The Mediterranean inspired garnish of orange and rosemary provides an additional depth to the drink.

  • 60ml Five Islands Old Tom Gin
  • 125ml Fever Tree Mediterranean Tonic Water
  • Orange and rosemary to garnish

Pour the gin and the tonic into a glass of ice, garnish with two slices of orange and a fresh sprig of rosemary.

 

Other Recommendations

Try it in any recipe that calls for Sloe Gin or Old Tom Gin (using it in a Ramos Gin Fizz is incredible). For a shorter drink serve it over ice with a dash of fresh citrus juice.

 

 

Sublime Contemporary Gin


 

This is our award-winning Batch Zero Gin recipe relaunched into our permanent collection.
Sublime Gin tantalises with strong aromas of lemon myrtle and cardamom, sweetness and smoothness of dandelion root and a warm peppery finish from grains of paradise. 

 

Gin + Blood Orange

The blood orange pairs extremely well with the cardamom in the gin to create a complex, balanced drink that is simple and easy to make.

  • 30ml Sublime Contemporary Gin
  • 90ml blood orange soda (Schweppes Agrum)
  • Lime wedge 

Add the Sublime and blood orange soda to a glass with ice. Squeeze the lime wedge in it and add it to the drink.

 

Summer Cup

An excellent drink to enjoy on a rooftop or patio in summer. The strawberry and cucumber cut through the sweetness of the lemonade while the mint and orange bring in an added depth to the drink.

  • 30ml Sublime Gin
  • 90 lemonade
  • Strawberry, orange and cucumber diced
  • Sprig of mint

Lightly muddle the strawberry, cucumber and orange in a glass with ice. Add the gin, top with lemonade and add the sprig of mint.

 

Sublimita

A gin-based twist on a margarita. Solerno blood orange liqueur is used to complement the cardamom in the Sublime. Enjoy straight up or on the rocks.

  • 45ml Sublime Gin
  • 30ml Solerno
  • 30ml lemon juice
  • 15ml sugar syrup 
  • Lemon wheel for garnish

Combine ingredients in a shaker and shake with ice. Double strain into a coupe (straight up) or chilled rocks glass on ice. Garnish with a lemon wheel.

Breakwater Navy Strength Gin

 

Breakwater is our signature gin, inspired by the classic London Dry Gin and our love of the coast.

We’ve enhanced the traditional bright pine and herbal notes of juniper with crisp flavours of whole grapefruit while angelica and dandelion roots impart a lingering salty savouriness.  

Our unique blend evokes the tang of sea spray at the breakwater, or catching the first ocean wave of summer - intense, exhilarating and calling you right back in again.

 

Breakwater + Soda

 

Simple, but great. This drink brings out the best of Breakwater, while skipping out on the sugar that come with sweeter drinks.

  • 30ml Breakwater Gin
  • 90ml soda water
  • Wedge of lime

Add the Breakwater and soda to a glass with ice. Squeeze the lime wedge in and add it to the drink.

 

Tom Collins

 

A classic for a reason. This gin and fresh lemonade cocktail goes superbly well with our navy strength.

  • 30ml Breakwater Gin
  • 30ml lemon juice
  • 15ml sugar syrup 
  • 50ml soda water
  • Maraschino cherry and lemon wheel for garnish

Add ingredients to a tall glass with ice. Stir and top with soda water. Garnish with a maraschino cherry and lemon wheel.

 

Aviation

The secret handshake of bartenders across the world, for fans of a dry and floral drink.

  • 45ml Breakwater Gin
  • 15ml Luxardo
  • 15ml lemon juice
  • 7.5 Creme de Violette
  • Maraschino cherry for garnish

Add all ingredients to a shaker and shake for a long time. Double strain into a coupe glass. Garnish with a maraschino cherry.

 

Dry Martini

  

A must-make cocktail if you love bold and savoury flavours and enjoy your spirits neat.The dry martini does our Navy Strength so much justice with its simplicity.

  • 60ml Breakwater Gin
  • Vermouth to coat ice
  • Two olives for garnish

Coast ice with vermouth in a mixing glass, drain. Add Breakwater, stir until diluted. Strain into a martini glass and garnish with two olives on a toothpick.

 

Cold Brew Coffee Liqueur

 

A silky luxuriant coffee liqueur, cold brewed with our vodka using beans roasted within 5km of the distillery at Verona Coffee. It is then gently sweetened with natural cane sugar, allowing the delicate complexity of the coffee’s natural flavours to shine.

 

Turbo G & T

 

The G&T with a big but enjoyable twist, the black coffee of easy to make gin cocktails.

  • 30ml Sublime Gin
  • 15ml Cold Brew Coffee Liqueur
  • 100ml tonic water
  • Strawberry for garnish

Pour Sublime and Coffee Liqueur over ice, top with tonic water. Garnish with strawberry.

 

Cold Fashioned

 

A delightful twist on an old-fashioned. Rich with notes of Jaffa and dark chocolate.

  • 15ml Barrel-Aged Geneva
  • 15ml Cold Brew Coffee Liqueur
  • 2 dashes orange bitters
  • Orange twist or orange wheel for garnish

Combine ingredients in a rocks glass and add in a a large ice cube. Garnish with a twist of orange or orange wheel.

 

Espresso Martini

 

A future classic, made better by doubling down on the coffee liqueur and pulling back the sugar.

  • 60ml Cold Brew Coffee Liqueur
  • 30ml espresso
  • 15ml sugar syrup

Add all ingredients to a shaker with ice. Shake hard. Strain into glass and garnish with three coffee beans.

 

Illawarra Plum Sloe-Style Gin

 

Our take on a native sloe gin, we macerate native Illawarra Plums for 12 months in our gin, only releasing it once the spirit is bursting with juicy berry flavour.  We then add some natural cane sugar to balance the bitterness from the native plums resulting in an endlessly sippable spirit.

Plum Gin & soda

 

Fruitly, effervescent and bursting with a subtly sweet, plum-like flavour with hints of pine. Dark, juicy, purple colour when served with soda, a truly one of a kind spirit.

  • 30ml Illawarra Plum Gin
  • 100ml soda water
  • Lime wheel for garnish

Pour Plum Gin over ice. Top with soda and add a lime wheel for garnish.

 

Charlie Chaplin

 

A one of a kind flavour and a testament to a classic cocktail, the Charlie Chaplin with our Illawarra Plum Sloe Gin is packed with flavour and a perfect display of simplicity's strength.

  • 30ml Illawarra Plum Gin
  • 30ml Apricot Liqueur
  • 30ml lime juice
  • Lemon wheel for garnish

Add ingredients to a shaker with ice. Shake well. Double strain into a glass. Garnish with a wheel of lemon.

Sloe Gin Sour

 

When the main ingredient is this good, a kiss of sweet and sour is all you need. The sloe gin sour provides everything you want for an all-night sipper with it's perfect balance and a craveable flavour.

  • 60ml Illawarra Plum Gin
  • 30ml lime juice
  • 30ml sugar syrup
  • 15ml aquafaba 
  • Lime wheel or lavender sprig for garnish

Add ingredients to a shaker. Dry shake. Add ice and shake well. Double strain into a glass. Garnish with a lime wheel or a sprig of lavender.

 

Cherry Gin

 

Along the lines of a sloe gin, we macerated fresh cherries for 16 months in our gin, only releasing it once the spirit is bursting with juicy cherry flavour.  We then add some natural cane sugar resulting in a very moreish spirit.

 

Cherry & Tonic

 

Served with mediterranean tonic and topped with ice adds a citrus lift and helps balance the rich cherry flavours. Bubbly and light, the perfect drink for your afternoon.

  • 30ml Cherry Gin
  • Mediterranean tonic water
  • Lemon wheel for garnish

Topple Cherry Gin over and fill with mediterranean tonic. Garnish with lemon wheel.

 

Cosmo Ultraviolet

 

A floral, gin inspired take on the popular cosmopolitan, Cherry Gin with an orange and violet bouquet, complimented by a traditional cosmo tartness.

  • 60ml Cherry Gin
  • 7.5ml Cointreau
  • 7.5ml Cremede Violette
  • 30ml lime juice 
  • Lime wheel for garnish

Add ingredients to a shaker with ice. Shake hard. Double strain into a glass. Garnish with a lime wheel.

 

Cherry Barrel Sour

 

Our cabernet barrel aged Geneva provides a red fruit highlight and complex finish to a classic gin sour made with our Cherry Gin, silk mouthfeel aplenty.

  • 45ml Cherry Gin
  • 15ml Cask Geneva
  • 30ml lemon juice
  • 30ml sugar syrup
  • 15ml aquafaba
  • Maraschino cherry for garnish

Marry ingredients in shaker with ice. Shake and strain into rocks glass with ice. Dress with a maraschino cherry.

Barrel Aged Geneva

 

Our take on a barrel-aged gin drifted a little further than intended towards whisky, ending up with something that fits comfortably in the Geneva category rather than Gin.

 

Geneva + Dry

 

A vibrant take on a whisky and dry, complimenting the spice and citrus notes of our Geneva.

  • 30ml Geneva
  • 100ml ginger ale
  • Lime wheel or orange wheel to garnish.

Add Geneva and ginger ale to a glass of ice. Top with lime or orange wheel to garnish.

 

Mt St Thomas

 

A modern take on Manhattan, the little black dress of old world cocktails.

  • 60ml Cask Strength Geneva
  • 15ml Cynar Artichoke Apertif
  • Maraschino cherry to garnish

Add ingredients to a mixing glass with ice. Stir until combined and strain into glass. Garnish with a maraschino cherry.

 

Geneva Sour 

 

A flavour-dense renovation of the classic whiskey sour.

  • 60ml Barrel Aged Geneva
  • 30ml lime juice
  • 25ml sugar syrup
  • 1 egg white
  • Orange slice for garnish

Add all ingredients to shaker with ice and shake. Strain into rocks glass. Garnish with an orange slice.
